Austin Leard, partner and beverage director of M’tucci’s Restaurants, developed their shrub project because he wanted to do something no one else in New Mexico was doing. He started with small batches in canning jars and has now created an entire product line. Leard likes experimenting with shrubs in cocktails, and Collins-style cocktails with citrus, shrub, and spirits have become his go-to. The shrubs are also used in several dishes on M’tucci’s food menus. M’tucci’s Shrub Cocktail

Servings: 1 Person

Ingredients

  • 1 ounce simple syrup
  • 1 ounce citrus fresh squeezed (lemon or lime)
  • 1 ounce M’tucci’s Shrub of choice
  • 1 1/2 ounces spirit of choice
  • 3 –4 ounces club soda

Instructions

  • Put simple syrup, citrus, shrub, and spirits in a shaker with ice and shake vigorously. Strain the mixture into a tall glass and top it with club soda. Add fresh ice, garnish, and enjoy.
