Warmer weather is officially settling in and spring is quickly spreading throughout the state. And we here at edible Santa Fe think this is cause for celebration. Enjoy this recipe for a Rhubarb Cooler from Santa Fe Spirits while taking in the changing of the season.

A cooler is perfect way to refresh yourself as it heats up and the addition of this Rhubarb Syrup helps to utilize all the offerings this Spring has to provide. Make it now while rhubarb is still in season!

Rhubarb Cooler

recipe by James Reis, Santa Fe Spirits, Tasting Room Manager

  • 2 ounces Wheeler’s Gin
  • 1.5 ounces rhubarb syrup
  • Soda Water
  • Amarena cherry

In a collin’s glass, add gin and rhubarb, fill with ice and top with soda. Garnish with amarena cherry.

Rhubarb Syrup

  • 1.5 pounds Rhubarb
  • 1 quart Water
  • 1/2 tablespoon Grated Orange Peel
  • 1 cup Sugar
  • 2 ounces Lemon Juice
  • 2 ounces Orange Juice
  • dash Salt

Place rhubarb, water, and orange peel in a large pot and bring to a boil. Reduce heat and let simmer 10 – 15 minutes (or until rhubarb is tender); cool slightly and strain through cheesecloth. Return liquid to plan and add remaining ingredients; heat until sugar dissolves. Set aside and let cool. Syrup can be stored in a fridge for up to 7 weeks.
