As fall quickly approaches here in New Mexico, it’s time to enjoy some of our favorite savory herbs. This Sage + Rosemary + Thyme cocktail is the perfect drink to welcome in cooler weather while using up some of our favorite savory herbs.

Sage + Rosemary + Thyme

  • 2 oz. Wheeler’s Gin
  • 1.5 oz. lemon juice
  • .75 oz rosemary simple syrup
  • Fresh thyme and sage

In mixing glass with ice, add gin, lemon juice and rosemary simple syrup. Shake vigorously and strain into a martini glass. Garnish with thyme and sage.

Rosemary Simple Syrup

  • 1/2 cup Sugar
  • 1/2 cup water
  • 2 sprigs rosemary

In a medium saucepan, bring sugar and water to a simmer, stirring constantly until sugar dissolves. Remove from heat and add rosemary. Let sit 45 minutes. Strain into a container. Rosemary Simple Syrup will last two weeks; refrigerated.
