Chile is in season so let’s get some of our famous locally grown chiles and see what the fuss is about! This class with Slow Food Santa Fe will delight those already familiar with New Mexico’s official state vegetable (even though it is a fruit!) and light the fires of passion for those yet uninitiated. Here in the Land of Enchantment, chile is more than an ingredient; it is the embodiment of a diverse and rich cultural heritage and a distinct Southwestern lifestyle. Participants will explore chile’s unique culinary history, taste different varieties, discuss particular uses of different chiles, and see if we can taste the difference between Northern New Mexican chiles and those grown down south. We will prepare and sample different red and green chile sauces. This will be an interactive demonstration class led by award-winning Chef Lois Ellen Frank.
